Healthy and Delicious Pineapple Sorbet 

The Summer is approaching with warm days and nights. Here's an idea for you to cool down in a healthy way , you can learn how to make a delicious pineapple sorbet . Before we get into the recipe I would like to talk about some of the benefits of pineapple . 

This Tropical Fruit has potential Anti-Inflammatory and digestive benefits . Pineapples are loaded with Vitamin A, Vitamin C , Fiber , Potassium ,  Phosphorus and Calcium . They are RICH source of Antioxidants (fight against free radicals in the body , preventing cell damage )  and Manganese ( helps in strengthening bones). Enjoy this SUPER FRUIT !!! Available year -round !!! 

                                 

PINEAPPLE SORBET RECIPE : 

* Whole fresh and frozen pineapple cored and chopped (chopped a day ahead of time )

* 1 cup of Almond Milk 

* 1 tbsp of Honey 

                                               

* Combine all the ingredients in a High Speed Blender , then Blend until a frozen sorbet texture is achieved .

                               

 TIP : Wash and freeze the skin !!! Looks lovely when you serve your Sorbet !!!  Makes 4-6 servings .

GLUTEN FREE /SUGAR FREE BANANA CAKE

                                            

 This recipe is great when you have a sweet tooth .It's made with organic ingredients and no added sugar . Like all my recipes it's very easy and fast to make so you wont spend too much time in the kitchen.

Ingredients :

2 bananas (ripe)

1/2 cup of organic raisins

1/4 cup of organic canola oil (non GMO)

1 cup of organic OAT flour

1 tablespoon of baking powder

2 eggs

1 teaspoon of ground cinnamon.

                                         

 *USE RIPE BANANAS TO HAVE A SWEETER FLAVOR IN THE CAKE !!!

 Directions : 

Put all the ingredients," liquids first" except the baking powder in the blender.

Blend until decently smooth,  than add the baking powder and blend again until fully incorporated .

Pour the mixture into the caking or muffin pan (grease pan with  organic canola oil and floured with organic Oat flour )

Bake at 400 degrees for 30 min or until done .

It's going to be delicious.

PIZZA WITH CAULIFLOWER CRUST !!!!! 

                                 

 Cauliflower is a one of the cruciferous vegetables.Contain vitamins (B1 B2, B3, B5,B6 and B9),good source of vitamin C and manganese( which are both powerful antioxidants) ,  minerals,phytonutrients (that mat help neutralize damaging toxins.Low in calories and lots of fiber !!! 

 Recipe : 

 1 cauliflower head 

1 teaspoon of sea salt 

1 egg

1 tablespoon of oregano (dried)

1/2 cup shredded mozzarella cheese . 

 Toppings :

 1 tomato , thinly sliced 

1/2 cup of marinara sauce (or any sauce as your taste ) 

1/2 cup shredded mozzarella cheese 

1/4 cup of fresh chopped basil .

 Cauliflower Crust : * chop cauliflower florets into chunks . Pulse the cauliflower in a food processor until looks like a couscous (fine grain) , about 2 min . Add cauliflower to a large mixing bowl . Stir in oregano , salt , mozzarella cheese and egg . The mixture will be soft and moist , easy to shape . 

*Place the cauliflower crust on a silicon -lined baking sheet or on a parchment paper sheet . Using your hands , press it into a circle about 1/4 inch thick . Bake in oven for 15 min ( 375 degrees F . ) . 

Change oven temperature to ( 425 degrees F ) and bake 10 min longer. Crust will be golden brown . 

* Remove crust from the oven add the marinara sauce and mozzarella . Add a layer of tomatoes and top with chopped fresh basil . Bake again at 425 degrees F . (about 5 min or until the cheese melts ) .

BodyKnockout's Super Salad .

                                 

 INGREDIENTS 

 2 cups of Kale 

2 cups of baby spinach 

2 cups of Alfalfa Sprouts

1 minced clove garlic  

1/2 cup of sliced almonds 

 Dressing : 

 3 tablespoons of Balsamic Vinegar 

3 tablespoons of Orange Juice 

3 tablespoons of Extra Virgin Olive Oil 

2 tablespoons of all natural and pure Honey . Whisk all together in a bowl and then pour to your salad . 

 To make your salad a little more fancy and colorful ,  you can add some mango slices , strawberries or dried cranberries ...

BODYKNOCKOUT'S BAKED CHICKEN BREAST ROLLS WITH BOK CHOY AND MOZZARELLA CHEESE. 

                                           

 INGREDIENTS :

   CHICKEN :

3 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness

Sea Salt to taste

Fresh ground black pepper to taste

1 teaspoon of complete seasoning

2 tablespoon of extra virgin olive oil

Let the chicken marinate for about 20/ 30 min .

                                              

 BOK CHOY :

 1 bunch of bok choy ( washed, drained and chopped )

1 clove garlic minced

1 1/2 tablespoons of corn oil

Sea salt to taste

Heat the oil in a skillet over medium heat . Add garlic , bok choy and salt , then saute' for 3-4 min until greens are wilted and stalks are crispy-tender .

                                               

 Lay the chicken breasts out on a clean surface, spoon some of the bok choy and 1 teaspoon of mozzarella cheese inside the chicken . Roll up chicken to enclose . Secure with toothpicks if necessary .

                                             

Bake uncovered on a baking sheet at 350 degrees for 35 -40  min or until the chicken is slightly brown and the juices run clear .
